Thanks to the Order of Food Technologists of Veneto and Trentino Alto Adige, and in particular to my colleague Stefano Zardetto for the invitation. It was an inspiring and well-organized meeting, where I shared the latest news on hygienic design regulations and new opportunities for EHEDG certification.
I was pleasantly impressed by the very high quality of the reports, which were always marked by a practical approach, yet without sacrificing correctness of information and language.
The recent publication by EFSA of a detailed review on the persistence of pathogenic bacteria in food production environments certainly contributed to the choice of topics.
This event provided further small confirmation that a collaborative attitude on the part of all stakeholders and a multidisciplinary approach are essential to effectively address the complex issue of food contamination, with particular reference to contamination by pathogenic microorganisms.
